Monday Make: Malteser Cake

1. All the ingredients gathered together
2. Weigh out 340g of plain digestive biscuits
3. Crush the digestives (preferably not with a potato masher!)
4. Crushed digestives
5. Pour 1 and a half sharing bags of maltesers into a bowl
6. Crush the maltesers
7. Melt 170g butter & 4 large tbsp of golden syrup
8. Add the digestives, maltesers & 2 large tbsp cocoa powder into a bowl
9. Add in the butter & syrup mixture

10. Mix it all together
11. Line a tray with greaseproof paper & pack in the mixture
12. Pop it into the fridge to cool
13. Break up a large bar of galaxy (300g ish) & melt in the microwave
14. Stir every 30 seconds to avoid it burning
15. Pour the melted chocolate over the cooled cake
16. Spread it out evenly
17. Optional bowl licking by Indigo :)
18. Pop it back in the fridge to set

And finally, cut it into small squares and devour :)

Indigo & I had lots of fun making this, except for the crushing part!! Mum has misplaced her rolling pin (kitchen renovation), so it was a lot more effort than it should have been! These are so delicious, but so rich and bad for you (hence the tiny squares!). I hope everyone has had a fab weekend & spoilt their mums rotten!! This is the first time I've logged in since I got home on Saturday, and I've really loved my time at home. I'm travelling back tomorrow as I have work for the rest of the week. Looking forward to catching up with my favourite blogs tomorrow evening!
P.s. What are these snow blizzards about with random bouts of Summer blue skies and sunshine?!
